The Journey of a Mango: From Farm to Puree at SKOT INDIA

A Day in the Life of a Mango Farmer

It all begins in the lush orchards of South India, where the mangoes bask in the tropical sun. At the crack of dawn, our dedicated mango farmers, many of whom have been working with us for decades, begin their day by inspecting the orchards. Armed with traditional wisdom and modern agricultural techniques, they check the ripeness of the fruits, ensure the soil is healthy and make sure the trees are free of pests.



By mid-morning, the farmers start hand-picking the finest mangoes. Alphonso, Totapuri, and other varieties are carefully chosen for their vibrant color, ideal ripeness and unique flavor profiles. The fruit is delicately handled to avoid bruising, ensuring that only the best mangoes make their way to our processing facilities.

SKOT INDIA owns 800 hectares of fertile farmland, manages an additional 3,000 hectares of contract farms and has access to 5,000 hectares of dedicated farmer networks. This vast agricultural base allows us to meet high demand and ensure a consistent supply of premium fruit purees, even during peak seasons. Our vertically integrated approach ensures complete traceability—from the orchard to the final product.

 

Transporting the Mangoes: Farm to Factory


Once harvested, the mangoes are loaded into trucks for transport. Our proximity to the mango-growing regions of Chittoor, Andhra Pradesh and Krishnagiri, Tamil Nadu allows us to minimize transportation time and retain the fruit’s natural qualities. Within hours, the mangoes arrive at our processing facilities, ready to be transformed into premium puree.



Inside SKOT INDIA’s Processing Facility: Where Magic Happens


At SKOT INDIA, technology meets tradition to create mango purees that are second to none. Our facilities span an impressive 25,000 square feet of main processing space, complemented by 70,000 square feet of ripening chambers. This infrastructure ensures we can handle large volumes without compromising on quality.

Step 1: Ripening

After arriving at the factory, mangoes are segregated based on ripening levels and stored in ripening chambers, where conditions are carefully controlled to ensure uniform ripeness. This step is crucial for extracting the optimal flavor and color.

Step 2: Inspection and Washing

The fruits are brought to the inspection belt, where dedicated workers meticulously inspect their condition. Any defective mangoes are removed. The mangoes are then cleaned in two stages: the first washing tub uses chlorine and the second uses clean water. This is followed by a fruit elevator water spray to absolutely ensure no chemicals remain.


Step 3: Final Inspection and Destoning

The mangoes undergo another round of manual inspection to ensure only high-quality fruit proceeds. Defective portions are carefully removed to minimize waste. The fruit then enters the destoner, where seeds and skin are separated, ensuring minimal pulp wastage.


Step 4: Pulping and Refining

The deseeded mangoes are processed through the pulper to extract the pulp and achieve a smooth texture. The puree is then passed through the decanter/separator to remove any black specs or impurities.

Step 5: Preheating and Quality Testing

The mango puree is transferred to the preheater, which eliminates microbial contamination while retaining the natural flavor and nutrients. It then moves to the balance tank, where it is tested for brix, consistency, flavor and color.

 

Step 6: Sterilization and Packaging

The puree undergoes final sterilization to ensure it is entirely free from contamination. It is then aseptically packed into drums and sealed. The finished product is moved to our warehouse, ready for global shipping.

Our sustainable practices further enhance our commitment to quality. By using solar energy to power our facilities and repurposing mango by-products (such as using mango seeds for industrial bricks and mango skin to make vegan leather), we minimize waste and reduce our environmental footprint.
